Ingredients

  • 225 g butter, unsalted
  • 115 g sugar, granulated
  • 225 g flour, all-purpose
  • 113 g flour, semolina
  • 2 tbl brown sugar

Instructions

  • Pre-Heat oven to 175°c / 350°f
  • Mix the flour and butter together with a pastry mixer or knives. Form into ball
  • Place parchment paper (in size of baking tray) on surface.
  • Dust parchment paper with sugar and roll dough in 1.5cm / 1/2", in a square shape
  • Slice the dough into long rectangles. Pierce with fork in regular patter.
  • Move paper to backing sheet and bake for 35-50 minutes, until just starting to brown
  • Remove from oven and let cook on cooling rack
